Despite the grey skies outside our window, summer is nearly here — and for number nine, that means embracing fresh, vibrant flavours that capture the season’s energy. One dish that never fails to deliver that feeling of sunshine is gazpacho. But not just any gazpacho — our Head Chef Stephen Golden Gazpacho, a chilled, silky blend of yellow cherry tomatoes, ripe peaches, sweet peppers, and a touch of heat.
It’s simple, refreshing, and packed with colour, making it the perfect starter or light lunch on a warm day. Ready to taste summer in a bowl? Let’s dive into Stephen’s recipe and method of cooking.
The view from my window right now will disagree, but yes, it is summer, which for me is all about freshness, tartness and colour. One dish for me that sums up summer is Gazpacho, especially my Golden Gazpacho; made with yellow cherry tomatoes, yellow peppers and, well, check out my recipe below:
4x yellow peppers
5x large ripe peaches
400ml fresh orange juice
2x red chillies
2x garlic cloves
2x cucumbers, peeled
3x banana shallots
50ml red wine vinegar
5oml olive oil
Pinch of sea salt
Roughly chop all the above ingredients and place in a bowl, cover and place in the fridge for at least 24 hours
Remove from fridge, add to a processor and blitz till silky smooth
Place back in the fridge until you are ready to serve, best served chilled.
To garnish your soup, simply take some old bread, tear into small croutons, toss in olive oil, garlic and salt and bake till crispy and golden.
To serve, add the soup to a small glass or bowl, lay a few croutons on top, drizzle with rapeseed oil and a few basil leaves,

I try to only buy from local farm shops, such as Rose Farm here in Ramsgate, Quex Farm shop in Birchington, and the Goods Shed in Canterbury. However, many of the above ingredients can be found in most shops, so please give them a try.
What would I pair this with? Well, something cold and not too sweet, like a Macerated Semillon orange wine from South Africa, perhaps accompanied by some warm bread and good friends.
